Quarantine friendly diet: 7 recipes for each day of the week with the same ingredient
One of the most versatile ingredients - and that costs very little - is the cauliflower. Instead of wasting that leftover cauliflower, let’s see how to reuse this ingredient for the whole week, without the risk of putty!
1. Cauliflower couscous
One of the simplest and most surprising recipes that you absolutely must try! Just blend the raw cauliflower and the result will look like a real couscous. You can season to taste and sauté in the pan if you want to flavor more.
2. Cauliflower hummus
Cauliflower hummus is prepared exactly like legume hummus, but the flavor will be a delicious novelty for your palate. You have to mix cauliflower, oil, salt, pepper, half a clove of garlic, a drop of water, tahina, lemon and a little cumin - I always leave the very general proportions vague because the hummus is a lot to taste, so experiment and find the right dose for you!
3. Cauliflower fillets
These are so good that they will become your new favorite dish. Simply cut the cauliflower into 2/3 centimeter thick 'fillets' and spread on a baking sheet. Put in a few pieces of garlic and season with oil, coarse salt and pepper. Bake at 200 degrees celsius until they are practically cooked and then leave and a few minutes under the grill.
Tip: they are perfectly accompanied by a few sauces! You can do it following the hummus guidelines with anything: carrots (excellent), peas, chickpeas, lentils, broad beans etc. or accompanied to simple tahini.
4. Pizza base
If you are also on a diet during this quarantine you can try pizza with cauliflower base! The flavor will never be the same, but it is very light, which also makes it very good... To prepare it you have to mix the cauliflower and then pass it in a pan to dry it. In a bowl, beat a couple of eggs with Parmesan, salt, pepper and oregano and combine the two compounds.
Finally you need to spread the dough on a baking sheet like a pizza and bake for 15/20 min at 200° celsius.
The base will be cooked and ready to be stuffed and baked for a few minutes.
5. Faux tandoori cauliflower
I say fake because we are going to use everything except the tandoori, but if you have it, it's welcome!
To prepare the tandoori cauliflower you will have to marinate some pieces of cauliflower in a mixture of yogurt and (many) spices - I used everything I had: different curries, cumin, a drop of cinnamon, turmeric, ginger, paprika ... and then add salt and pepper.
Leave to marinate overnight - or even a few hours if you are cold - and the next day spread directly on the pan with all its sauce. Bake at 200 degrees celsius and when the cauliflower is practically cooked put it under the grill for a few minutes.
Tip: this recipe is perfect to accompany chicken prepared with the same procedure or basmati rice in white.
6. Cauliflower rosti
For the cauliflower rosti you just need to grate or mince a cauliflower and add salt, pepper, oil, garlic, basil, if you have chives, parmesan and egg. Mix the ingredients evenly and with your hands form some mashed potatoes and spread on the pan. Bake at 180 degrees for half an hour. If you prefer cooking in a pan, fry with a little oil until the schiacciatine is golden brown and crispy outside. Delicious!
